    Ice-cream
    Per person:
    100g frozen berries or cherries
    100ml double cream
    1tsp sweetner

    Blitz berries in food processor till in tiny pieces. Add cream and sweetener. Blitz till ice-cream. You cannot freeze this so eat immediately!

    Individual chocolate pudding

    Recipe makes 2

    50g butter, melted in the microwave
    3tbsp ground almonds
    1 1/5 tbsp sweetner
    1/4 tsp vanilla
    Pinch of salt
    1 egg
    1 tbsp cocoa powder
    1/2 tsp baking powder
    2 squares 70% dark flavoured with orange chocolate
    Or
    1 square 90% chocolate, chopped
    2 tbsp pecans

    Melt the butter in a bowl, add remaining ingredients and divide into 2 mugs and nuke for 1 minute per mug.

    Scandi have you ever made fat bombs? I made some for the first time at the weekend and they were....vile! Half a cup of coconut oil with half a cup of melted butter? WTF!

    What flavouring did you use for the fat bombs?

    Can't say I've ever made them, but most I've read about have added chocolate, coconut, etc. to give them flavour.

    I shudder to think about the days before me and my wife had kids and on a saturday night we'd polish off a whole carrot cake followed by a tub each of Ben and jerry's ice cream!  affraid I probably ate more carbs on a saturday night back then than I do in a whole month now!

    They were peanut butter ones Indy. Recipe taken from the Low Carb Coach website. Made with cocoa, peanut butter, coconut oil and butter. I reduced the quantities of coconut oil and butter by half as it looked excessive. They look pretty and I thought would be handy for snacking on and travelling. If I'd used full quantities I dread to think what they'd have tasted like! Might try adding unsweetened coconut next time. If there is a next time!
