Chicken livers fried in onions and bacon fat with a salad of avocado, tomato, onion, feta cheese, olive oil and cider vinegar. I can never get enough of the salad it's so delicious.

Tonight, half a roast chicken with Waitrose coleslaw. Yes, I know making coleslaw is easy, no, it won't taste as good as Waitrose though lol !

Dug my slow cooker from the back of the cupboard where it has been hiding for too long. Made a casserole of steak, kidney (yum), celery, carrot and onion with stock, herbs and a glug of red wine, popped it on, then out for a bracing walk and hopefully a delicious casserole later, served with Jan's favourite of mashed swede and sprouts (love 'em).

Tonight we have chicken breast with skin on served with cauliflower cheese and you'll never guess the other vegetable - it's been mentioned here already
I've not got a slow cooker - so many people say how good they are though .......

Washing Machine Fixed (see check in and chat!) the gammon with cauliflower cheese, a little cabbage and buttery mashed swede is almost ready ..... smelling good.

Tonight I'm making one of our favourites, Melanzani Parmigiana, or as we say in these parts, aubergines with parmesan cheese:
Make up a sauce by frying a little garlic in olive oil, adding a tin of tomatoes and a slosh of red wine and lots of chopped up oregano. Let it bubble away until it has thickened a bit.
Slice aubergines length ways, brush with olive oil, then grill until softened and golden.
Layer the cooked aubergines in an oven proof dish with the tomato sauce.
Top with grated cheese, traditionally parmesan cheese.
Cook, in the oven, until the cheese has melted and begun to turn golden.
Depending on size, I tend to use one aubergine per person. One tin of tomatoes will do up to four servings, depending on how much you cook it down. While I'm doing it, I usually make up enough to freeze a couple of portions.

Sounds yum
I had steak and cheesy cauliflower mash
Tried the steak slightly different, put oil with steak spice into frying pan and marinated it for a few minutes per side, before taking it out and heating pan, I usually add it, I read about this way to cook it, I usually brush it and add the pepper, this was similar and it made absolutely no difference lol

I missed dinner due to a half hour journey home that took 2 and a half hours
Went into asda and all their hot meat was on whoops offer, I bought a hundred cooked sausages and 100 chicken wings for next to nothing it's was very nice but I over ate, feeling pregnant at the moment

You do realise Andy those sausages wouldn't be high pork content and as such could have around 3g carb per sausage, so that means you had 300g carbs in one sitting

At last my local Tesco has started stocking Nandos peri-peri salt Last night I had Quorn fillets fried in coconut oil then seasoned with lime juice and peri-peri salt. Really tasty.

Tonight's grub.
Lowcarb Luxury Lasagne, lowcarb food at it‘s best !
Ingredients serves two
250 grams ground/minced beef
1 aubergine/egg plant
1 red onion
A splash of olive oil
300 ml of double cream
One 400 grams tin of chopped tomatoes
A cup of fresh grated cheddar cheese
Half a red pepper chopped
Half a green pepper chopped
A handful of button mushrooms
Salt, pepper and mixed herbs to taste
Method:
Fry the finely chopped onion with the olive oil in a large frying pan, Americans call this a skillet I believe. When soft add the minced beef and brown. Add the chopped peppers, mushrooms and chopped tomatoes. Allow to come off the simmer and add the double cream, and stir well. Cut the aubergine into thin slices around 6mm/ around a quarter inch thick. Layer up, one layer of aubergine and one layer of the beef mix, in your oven proof dish, adding some salt, mixed herbs and pepper. Place in oven set at 200c for around thirty minutes. Remove and cover with grated cheddar cheese. Place back in the oven and cook for a further 10 minutes or until the cheese is golden brown.
A truly great meal, very easy and lowcarb, enjoy !

Went to a very posh restaurant in Esher I had slow cooked lamb, kids had the spuds and Yorkshire, could have done with a tonne more veg than the single tree of broccoli and tiny bit of what I think was cabbage but was amazing lamb! Had coffee instead of pudding, apart from cheese they didn't have a suitable pudding and the cheese was funky sounding with crackers, I think everyone else had a bigger problem with me missing pud than i did lol

I think many who eat LCHF very often choose cheese as a 'pudding'.
Perhaps we should all get-together and open a LCHF restaurant?

I had curry with cauliflower rice and cucumber salad today. Made loads so that I can have it again tomorrow. I have retinal screening tomorrow afternoon and want to be sure I have something ready to eat in case they give me eye drops this time and I am too skelly-eyed to find food
