    Prosciutto wrapped Asparagus

    Now who doesn’t love an easy and impressive recipe? This simple dish is made with only 5 ingredients. Prosciutto wrapped asparagus can be cooked in the oven or even on the barbecue for summer. Serve it as an appetiser, side dish, a light lunch or finger food. A full platter would look beautiful to take to friends. And for a luxurious breakfast, dip in soft boiled eggs instead of toast soldiers.

    Ingredients:
    6 Wraps
    12 asparagus spears
    6 thin slices prosciutto
    1 tbs ground almonds
    30g Cheddar cheese grated into a fine texture
    2 tbs double (heavy) cream

    Method:
    Mix the Cheddar cheese and ground almonds in a small cup.
    Cut the bottom inch from the asparagus spears then place into a large saucepan.
    Add enough boiling water to just cover the asparagus, bring to the boil for 2 minutes. You want the asparagus to remain slightly crunchy, but not raw, in the middle.
    Remove from the heat and drain.
    Place a prosciutto slice on a chopping board and place 2 asparagus spears diagonally on top.
    Sprinkle a little of the cheese mix across the asparagus and drizzle with a little cream then roll up. Place in the baking dish.
    Repeat with all the other prosciutto slices and asparagus spears.
    Once they are all lined in the baking dish, sprinkle the remaining cheese mix.
    Bake at 180C for 15 minutes, or until golden and the cheese has melted.

    Asparagus has many health benefits, and often appears in my menu plans.

    How about this recipe idea?

    Here Are Five Health Benefits Of Asparagus Quiche+1

    Crustless Asparagus Quiche

    Ingredients:
    6 eggs
    One tin of whole asparagus spears 244 grams
    1 heaped tablespoon of finely chopped Jalapeno green peppers for extra zap
    6 tablespoons of double cream
    Salt and pepper to taste.
    Serves 2-4

    Mix the ingredients in a bowl or pyrex jug
    Pour into a non stick baking dish 8" x 1.5"
    Place the asparagus spears
    Place into a pre heated oven at 190c and cook for twenty minutes.
    Serve with a mixed salad. Great lowcarb food and won't break the bank.

    Grrrrr . . . asparagus season was very short this year, usually it goes on until the samphire starts and sometimes until the runner bean season begins. It's one of those things I reckon tastes better the less distance it travels so I mainly only eat it when the local farms are in production. Now I have to wait until next spring Razz

    Fresh asparagus is delicious ... but the recipe above, using tinned  affraid works well.

    Guess it's a little bit like the great British Strawberry - tastes great in season, and just to think there were seasons in our foods many years ago before those air miles came in.

    However, for good or bad it does enable us to buy a variety of different foods nowadays.

    Little known fact, you can sometimes find wild asparagus, which like a surprising number of our modern vegetables is a coastal plant.

    What was the ultra expensive trend a few years back, Goji berries or Noni berries? Likewise, only probably from escaped hedging shrubs. Samphire too, but I wouldn't recommend Sea Kale or Wild  Carrot unless you've been to the dentist recently, they are seriously tough and fibrous.

    I tend to keep seasonal foods seasonal, but I have been known to eat strawberries at Christmas.

    Ingredients:
    Serves Four
    1 lb green asparagus, ends trimmed
    3 oz. bacon, cooked crisp and chopped
    2 large, hard-boiled eggs, peeled and halved
    2 tbsp. avocado oil or olive oil
    2 tbsp. red wine vinegar
    1 tbsp. Dijon mustard
    1 tbsp. bacon fat
    1 garlic clove, minced
    1 pinch sea salt
    1 pinch red chili flakes
