    From a friend......
    Gluten free banana bread.
    Came out lovely and light. Impressed wit the results.
    For us diabetics l think it needs an adjustment almond flour not rice and bananas are tricky but hey going to ask other half to try this.....

    Recipe is as follows
    100g butter
    100g rice flour
    Pinch of salt
    50g Xylitol sweetener
    2 tspn of baking soda
    3 mashed up banana's
    Cinnamon
    Nutmeg
    2 large eggs
    Mix butter and sugar well, then add flour and baking soda. Mix well.
    Add the eggs and continue mixing well.
    Add mashed bananas and finish of the mix until it is smooth.
    Pop into oven or halogen fan oven for 45 minutes at 180 degrees C.
    Enjoy with coffee or tea.

    Thanks for sharing this recipe idea ...  and have to agree with you, bananas for diabetics are tricky. They are not good for Eddie's BS numbers, so we steer clear of them.

    However, there are many other recipes that use almond flour and can be very suitable for those living the LCHF lifestyle. If you do try this recipe switching rice flour for 'almond flour' please let us know how it turns out.

    As ever if you are a diabetic and have any doubts about your BS numbers it's best to test them on your meter.

    I love a cup of tea with a piece of low carb cake .....the strawberry one is great and I think it's in our recipe section  Smile
