Hi I'm from the north in Durham area, and I've been dying to join this forum because I came across it looking for low carb cakes and this place popped up with some lovely recipes!
I was diagnosed as pre-Diabetic last year and have had some struggles since then letting go of bad eating habits. Long story short - I lost a few stone on low carb, then gained them back when I fell off the wagon having not understood that sneaking jelly babies was a signal to my still sugar-addicted brain to demand more. And more. And more! I ate the jelly babies in march and basically the sugar-binge lasted til the beginning of september! It brought with it all my old hyperglycaemic symptoms such as aching legs, lethargy, high blood pressure, swollen ankles, brain fog etc! Also, I put all the weight back on that I'd lost.
Anyway, I'm back on track now and tweaked the diet towards keto which has enabled me to have best control over my appetite and my weight is dropping once again (I don't eat dairy because of my asthma and so have found the Paleo version of Keto suits me best). Also, my HbA1C came back normal this year despite my months of sugar-based carnage (2 out of the 3 months the test measures my diet had been terrible, with only one full keto, so it must have made a real difference!) I've joined a couple of low carb-friendly diabetic forums now with a view to doing all I can to keep myself on track, and maybe get the opportunity to offer some support to others too who have been struggling along the way.
I'm looking forward to learning and sharing here with everyone!
