    No picture at this time sadly but this is a great low carb winter warmer for all the family.

    Ingredients

    5 Boneless chicken thighs
    500 grams Mixed mushrooms roughly chopped(I use a mixture of Portabello,chestnut and Shitake)
    3 Chicken stock cubes
    1 Bunch of fresh Thyme,chopped
    1 Bunch of fresh flat leaf parsley,chopped
    1 glass(es) Sherry or Madeira wine(Optional)
    600 ml Fresh double cream
    1 Large onion,roughly chopped


    Method

    Season the chicken thighs with salt and black pepper and then fry in a large stockpot in Butter until coloured,remove and set aside,add the chopped onion and mushrooms to the pot and sautee until softened and then re-add the chicken thighs to the pot along with the parsley,thyme,chicken stock cubes,sherry or madeira wine(If desired) and then add boiling water to the pot until the pot is at least half full and stir,add the lid and simmer for approx 90 minutes,giving a quick stir every 30 minutes or so.
    Remove pot from heat and Blitz the ingredients in the pot with an electric hand blender until smooth,add the cream and stir in,check the seasoning and adjust the salt and pepper accordingly,garnish with some chopped parsley if you like then serve...Low carb bread rolls would go nicely with this.

    Serves between 6-8

    Hi Paul - just read through your recipe. Sounds a lovely low carb soup recipe, and nice and creamy (doesn't adding cream to a recipe make a difference) just right for the Autumnal Days that will soon be here ...judging by the weather we had earlier.

    I was reading an article earlier this afternoon by chef Peter Knight ..he loves using cream and butter in a lot of his recipes and always has a fridge full of fresh vegetables and fruits. Sounds good to me.

    minus the alcohol though "ack" hehe

    seeing the mushroom soup recipe . just say I made this recently for family . didn't use any alcohol . taste was very good . we all liked it .
