    Libby at Ditch The Carbs Blog is a busy person, looking after family ... creating some great low carb recipes, plus a hundred and one other things! She recently posted, this great meatloaf recipe - one to share and try out  Smile

    It is incredibly low carb with only 1.2g per slice.
    Hide grated vegetables inside.
    It’s fabulous for breakfast the next day or school lunches.
    The meatloaf can be frozen as individual slices with baking paper in between. Defrost a slice as you need it.
    Leftovers are king for breakfast (cereals are so last year  Wink )

    INGREDIENTS
    Serves 12
    1 spring onion sliced
    2 crushed garlic cloves
    750g / 1.6 lb mince/ground beef
    750g / 1.6 lb mince/ground pork
    2 eggs lightly beaten
    handful fresh chopped parsley
    handful fresh chopped basil
    2 slices bacon diced
    30g / 1 oz chopped sun-dried tomatoes (optional)
    2 tsp dried oregano
    +/- salt and pepper to taste
    grated vegetables of choice can also be added
    slices of bacon to cover the meatloaf
    Optional - if not paleo you can add 100g / 3.5 oz grated cheese of choice to the meatloaf mixture

    INSTRUCTIONS
    Oil and line a baking tray before starting.
    Put all the ingredients in a large mixing bowl and mix together with your hands until all the ingredients are thoroughly incorporated together.
    Form into a large meatloaf shape on the lined baking tray. Cover with the bacon slices and sprinkle on parmesan cheese (optional).
    Bake at 180C/350F for 50 minutes or until thoroughly cooked in the centre.
    NOTES
    * Nutrition values do not include vegetables you may choose to add. You will need to make additions for those.

    Serving size: 1 slice (serves 12) Calories: 370 Fat: 25g Carbohydrates: 1.2g Sugar: 0.6g Fibre: 0.2g Protein: 35g

    Another meatloaf recipe suggestion I saw at Libby's Ditch The Carbs Site.

    It's Easy Meatloaf Cupcakes and she says "The best thing is, unlike a regular full sized meatloaf, the meatloaf cupcakes are so quick to cook. I’m always going on about “leftovers are king” but these really are. Make a huge batch, vary the flavours and freeze them. You will always have a snack, lunch or breakfast ready."

    Ingredients:
    Base Recipe
    1 onion diced finely
    700g / 1.5lb ground/mince beef
    2 eggs lightly beaten
    salt and pepper to taste
    100g / 3.5oz shredded/grated cheese

    Examples Of Flavourings
    2 slices bacon diced
    handful fresh basil
    handful fresh parsley
    1/4cup sundried tomatoes diced
    2 tsp dried oregano
