    This scrummy Cauliflower cheese recipe below isn't mine-The author of this great and very simple recipe is Fergus who is a member of this forum and posted this a few years back on the 'Low Carb Diabetic' blog and as I've made this recipe and enjoyed it many times I just HAD to 'nick it' and bring it over here for you guys to enjoy! I hope you don't mind Fergus! Smile

    I've even added some 'Horseradish sauce' to the mix as well when making it when having it as a side with my Roast Beef! Bloody lovely and most importantly-Low carb! Smile

    Ingredients:

    1 cauliflower, broken into bite sized florets
    140ml double cream
    125g mature cheddar cheese
    1-2 tea spoons dijon mustard
    1 large free range egg
    salt & pepper

    Steam the cauliflower (in a colander over a pan of boiling water) until a fork passes easily through the stems. Remove to a baking dish and discard the water.

    Pour the cream, cheese (reserve some to sprinkle over the dish) and mustard into the pan over a medium heat and stir until the cheese is melted. Remove from the heat and whisk in the egg. Now pour the mixture over the cauliflower and sprinkle the remaining cheese over the top. Bake in a fan oven at 170 until the cauliflower is golden brown (30-35 minutes).

    I have made this and you're right - it is scrummy. I added some chopped, cooked bacon to mine.

    Yes, this is a lovely low carb recipe. Whether you have it as a supper dish or with a main meal it is delicious.

    Like the idea of adding the chopped cooked bacon too.

    Sounds nice. I make cheese sauce by melting down Philly and putting some grated cheddar. Don't use the high fat Philly because it will congeal once melted
