Courgette / Zucchini Crisps (Chips) with Parmesan Chips_parmesan

I first saw this being featured in Denise's Blog, see link below. I thought it a good one to share ... Zucchini / Courgette chips (crisps) with Parmesan flavour. For a better taste sprinkle the top of the zucchini slices with paprika. This can make a lovely snack ... why not give them a try?

    Zucchini Chips (Crisps) with Parmesan

    Prep time: 10 mins
    Cook time: 30 mins
    Total time: 40 mins

    Serves: 4

    Ingredients:
    2 large zucchinis / courgettes
    2 tablespoons olive oil
100 g freshly grated Parmesan cheese
    1 teaspoon (Himalayan) salt
½ teaspoon freshly ground black pepper
    2 tablespoons breadcrumbs
    ½ teaspoon paprika (optional)
coconut oil for greasing the baking pan

    Let's get started!
    1. Preheat the oven to 220°C/ 430°F.
    2. Wash the zucchinis/courgettes, cut both of the edges and start cutting the vegetable into thin (6 mm ¼ inch) round slices, using mandolin slicer. Don’t peel the courgette.
    3. In a large bowl mix the slices with the olive oil.
    4. Grease the baking tray with coconut oil or line it with parchment paper.
    5. In a medium bowl mix the Parmesan and the breadcrumbs, season it with salt, pepper and paprika. Dip every single slice in the Parmesan breadcrumbs mixture, then place them in a single layer on the baking tray.
    6. Bake the zucchini slices for 30-35 minutes until they are browned and crispy.
When the chips/crisps are ready, remove them with a spatula and let them cool.

    Now ... enjoy.

Please note there are some breadcrumbs in the recipe so it may not be suitable for all. Any recipes on this forum are only suggestions, and it is each readers choice whether or not to give them a try. So if you are a diabetic (as many readers are) test is best i.e. use your blood sugar meter ...

Now ... that does look a great bowl of lower carb crisps/ chips - but what do you think?

    All the best Jan
