    Type two diabetic-low carb diet (50 carbs per day) and two 500mg Metformin pills per day. Apart from diagnosis HbA1c almost 12-all HbA1c results none diabetic. For over eight years my diabetes medication has not changed. My weight has remained stable, I have suffered no ill effects from my diet whatsoever. Every blood test has proved, I took the right road to my diabetic salvation. For almost seven years, I have asked medical professionals and naysayers, how do I maintain non diabetic BG levels on two Metformin other than low carb ? The silence has been deafening !

    That salmon omelette looks proper nice ! Thanks for the link Eddie, some great ideas there. I usually quickly turn off recipe sites but the pics kept me scrolling.

    Brie Stuffed Mushrooms

    Another great low carb food idea !

    Saw this great recipe and thought I must share it.

    Lovely as an appetizer, or as a side dish ..... stuffed mushrooms are it !

    Ingredients:
    3 Tablespoons of butter,
    1 package button mushrooms, washed, dried, and stems removed
    3 cloves Garlic, Minced or 3-4 teaspoons of jarred minced garlic
    salt
    ¼ cup Flat-leaf Parsley, chopped, or 3-4 tablespoons of dried parsley
    4 whole Green Onions, chopped
    1 slice (wedge) Of Brie Cheese (or other cheese - but brie is really the cat's meow.)

    Instructions:
    Melt butter in large skillet/pan. Add mushrooms and turn to coat in butter. Sprinkle lightly with salt. Brown for a couple of minutes, then remove mushrooms from pan and place in a baking dish.

    In the same pan add garlic, parsley, and green onions. Sprinkle very lightly with salt. Stir and toss to coat for a few minutes. Remove from heat.

    Carefully cut white rind off of brie wedge, then cut tiny pieces of brie to fit each mushroom. Press each piece of cheese into the inside of a mushroom.

    Pour parsley garlic mixture over the top of mushrooms.

    Put pan into a preheated 350 degree F oven for 15 minutes, or until brie is melted.

    This stuffed mushrooms recipe is really divine. Next time you need a recipe for stuffed mushrooms, give this one a try.

    There are some great recipe's on that blog ......

    Recipe's are made for sharing - and can be adapted to suit the individuals needs, any allergies, likes/dislikes  etc
