    Chicken Cordon Bleu - Low Carb

     

    Chicken Cordon Bleu Z

    Serves: 4

    Ingredients


    • 4 chicken breasts, boneless and skinless

    • [size=12]4 Swiss cheese slices[/size]

    • [size=12]4 deli ham slices[/size]

    • [size=12]½ teaspoon salt[/size]

    • [size=12]1 teaspoon paprika
      Instructions[/size]



    1.    Preheat oven to 350. Coat a baking dish with butter or nonstick cooking spray.

    2.    Pound chicken breasts to about ½ inch thickness.

    3.    Sprinkle each breast with salt and paprika. Place a ham and cheese slice on top of each breast.* Roll the edges of the chicken over the ham and cheese, secure with toothpicks.

    4.    Place rolled breasts in baking dish and bake for 35-40 minutes, or until chicken has cooked through completely.

    5.    Remove toothpicks and serve immediately.

    Notes

    *I doubled the cheese because of a cheeseaholic. And I found that ranch and a pinch of paprika made a tasty cream sauce over these.

    Looks a lovely recipe idea ....

    Daughter-in-law does a very similar recipe - in fact it could be the same recipe!  Smile

    She serves with carrots, cut into chunky pieces, and broccoli  it is very colourful and YUMMY.

    Carrots are of course slightly more carby than broccoli  so if you need to carefully watch carbs perhaps just broccoli is the better idea.

    I love looking at and sharing great recipe ideas.
