    Low carb flax seed bread

    Nutritional Information: If you cut this loaf into 12 thick slices each slice has less than 1 gram of effective carbohydrate, 5 grams fibre, 6 grams protein, and 185 calories.

    Flax meal loaf. Weight of cooked loaf 742 grams.

    Ingredients.
    2 cups of ground flax seeds (280 grams)
    5  eggs
    100 grams of water
    100 grams of liquid butter
    One table spoon of baking powder
    One tea spoon of salt
    Added mixed dried herbs

    Method

    Place the eggs in a mixing bowl and whisk. Add the butter and water. Place the flax in another bowl and add baking powder, salt and herbs and mix.… Add the wet mix to the dry mix and mix thoroughly. Place the mix into a non stick bread tin and bake at gas mark 7 for 55 minutes, electric fan oven 200c for 55 minutes. All ovens are different, so you will have to experiment a bit. Add some walnuts and sun dried toms into the mix and you have meal in itself. Just add that lovely butter. The beauty of this bread is that it is easy to make, and requires no cooking skills or special equipment.

    Made some! I added cheese, pumpkin and sunflower seeds to mine. It tastes yummy and was sooooo easy to make!

    Made it. Works really well. Bit of an acquired taste though better lightly toasted. Given it's something to dip in my boiled egg, I'll persevere with it.

    Thank you for posting this recipe. Enjoyed it for breakfast this morning. Much nicer than the recipe I usually use.

    Oh I have been looking for something like this for so long!! I tried to make the cauliflower bread and the pizza crust from cauliflower but it's not for me. I thought that with flax seed the protein intake would be too much. The protein intake is limited too in my diet. This seems perfect!! I really need to give it a try!
    Has anyone tried this for pizza?

    I am going to try this today. I just don't understand how 2 cups are 280 grams? Is this right or a mistake? I know that the US cup is 240 grams but have no idea about the british one. Can anyone help?

    Good point. I realised at the time a cup size is non to accurate a definition, hence I weighed the flax seeds. 280 grams total is correct.

    I didi it yesterday without adding anything and it's very good! I put some cream cheese on the top for breakfast! Yummy! Very Happy

    Aldi and Lidl do ready milled flax/linseed packs for quite a reasonable price.

    We get ours in Waitrose around £2 a bag marked as Golden Linseed 500 gram bag. I expect many places sell these. A point to remember, it's best to buy the un-ground seeds and grind in a coffee grinder when you require seeds for use. This is a much cheaper way to buy flax seeds also once seeds are ground they can go rancid very quickly.

    Organic or hippy-type Wholefood shops or market stalls are also a possibility (that dates me!) Even our Co-op has a shelf or two of such things, maybe under gluten-free.

    Thanks Graham I should have checked. I see my GP on Thursday he is talking about putting me on one of the novel meds, Rivaroxaban probably.
    I cannot get my inr up I am on 11.5 grams of warfarin

    I apparently eat too much vit k!

    Thanks Graham, I made some this am by recipe method
    and had a slice at lunch and it was good. I cut my loaf
    into 9 slices. It is very filling.Smile
