    How to make low carb gluten free pasta out of Zucchini/Courgettes

    Zucchini is a quick and easy gluten-free, grain-free pasta alternative — you don’t even have to cook the zoodles. But if you want it a little softer, you can blanch it in boiling water for a couple of minutes. Or just add it to the pan with whatever sauce you are making for the last few minutes of cooking. Zucchini pasta works well with just about any sauce and also makes a great cold salad.

    Type two diabetic-low carb diet (50 carbs per day) and two 500mg Metformin pills per day. Apart from diagnosis HbA1c almost 12-all HbA1c results none diabetic. For over eight years my diabetes medication has not changed. My weight has remained stable, I have suffered no ill effects from my diet whatsoever. For almost seven years, I have asked medical professionals and naysayers, how do I maintain non diabetic BG levels on two Metformin other than low carb ? The silence has been deafening !

    I really like courgettes / zucchini and there are many ways to incorporate them into a LCHF menu plan.

    Just cut them up and hey presto they are in a casserole or wherever you'd like to use them.

    Have been contemplating getting a Spiralizer. Stull chewing it over.....

    I have thought about getting one of these gadgets but could it be it ends up in the back of a cupboard gathering dust. Some years ago I lashed out a lot of wonga on a magimix food processor, it is a fantastic piece of kit and beautifully made to last a lifetime. Big draw back, after use it takes so long to clean. Mind you it looks good on the kitchen work top. freakout

    This recipe idea was first posted back in November 2014 ... but it's always good to remember there are some great alternatives to some higher carb foods. Take this low carb "pasta" for instance... just add a bolognaise with some minced lamb or beef for a mid-week meal this week ?
