    Sparrow Grass Empty Sparrow Grass

    Post by chris c Sat May 06 2017, 22:52

I'm currently into year twelve of my long term study and seeking more participants.

    What goes best with asparagus?

    Steak?

    Lamb chops?

    Liver and bacon?

    Other?

    All of the above?

All of the above apart from "other" which is open to interpretation  Wink

Sparrow Grass I thought ... deserves some delving into!!!
    So I did Smile

Found a lovely blog post from 2009 on 'In Our Grandmother's Kitchen' it features a lovely Mother called Jan (now there's a coincidence) with her 'Sparrow Grass' in hand.

There is also a lovely recipe to accompany the post
Roasted Asparagus with Feta Cheese ... yes, guess what ? I'm sure you can guess Smile

    Now to answer Chris's question

"I'm currently into year twelve of my long term study and seeking more participants.

I love asparagus with steak and lamb chops
Not so keen on having it with liver and bacon ... prefer broccoli
However I do like it in a salad, or as soldiers when eating a boiled egg, or wrapped in prosciutto.

In fact I've only been researching about nine years so I have a little more to do Wink
I can't say it's tough doing this kind of research sunny

We've got chicken wrapped in Chorizo tonight stuffed with red pepper and Manchego.
Funnily enough M is for Manchego ... also great with asparagus and toasted almonds
    see here

Happy Evening everyone, and if anyone has got any favourite recipe's featuring Chris's 'sparrow grass' - do share your thoughts

    All the best Jan

Haha I just knew you would come up with some good alternatives!

Was it you, or did I see elsewhere a recipe for bacon-wrapped asparagus?

Think it may have been this ...

    Sparrow Grass Rsz_asparagus2

Now who doesn’t love an easy and impressive recipe? This simple dish is made with only 5 ingredients. Prosciutto wrapped asparagus can be cooked in the oven or even on the barbecue for summer. Serve it as an appetiser, side dish, a light lunch or finger food. A full platter would look beautiful to take to friends. And for a luxurious breakfast, dip in soft boiled eggs instead of toast soldiers.

    Ingredients:
    6 Wraps
    12 asparagus spears
    6 thin slices prosciutto
    1 tbs ground almonds
30g Cheddar cheese grated into a fine texture
    2 tbs double (heavy) cream

    Method:
Mix the Cheddar cheese and ground almonds in a small cup.
Cut the bottom inch from the asparagus spears then place into a large saucepan.
Add enough boiling water to just cover the asparagus, bring to the boil for 2 minutes. You want the asparagus to remain slightly crunchy, but not raw, in the middle.
Remove from the heat and drain.
Place a prosciutto slice on a chopping board and place 2 asparagus spears diagonally on top.
Sprinkle a little of the cheese mix across the asparagus and drizzle with a little cream then roll up. Place in the baking dish.
Repeat with all the other prosciutto slices and asparagus spears.
Once they are all lined in the baking dish, sprinkle the remaining cheese mix.
Bake at 180C for 15 minutes, or until golden and the cheese has melted.

Recipe idea is Libby's at Ditch The Carbs site here
    http://www.ditchthecarbs.com/2014/11/12/prosciutto-wrapped-asparagus/

    Rather Yummy !!!

I even knew someone who ate it raw in salads, Mostly I don't faff around with it too much, just boil it briefly and slather it in butter. Then hold my nose when I pee for a few hours.

The local crop is in now, though I fear without rain it might be a short season. Several of our farmers down on the sand where most of the veggies are grown are constructing bigger lakes/reservoirs for irrigation water, though it may take some time to fill them. Duck and asparagus, now there's a thought.
