Hi Randburg ... and many thanks for posting this.

I know many people do like natural coconut yogurt and I think it generally works out at about 4.6g carb per 100g. You can of course always add some low carb fruits like raspberries, or a few blueberries etc.

Must admit have not tried making my own, as the video showed... but interesting, thanks.  Smile

    Thanks Jan.
The Carb is then better than the full cream natural yogurt, I currently use.
This is between 6 and 7 g/100ml, depending on make I use
So whilst 1 or 2 grams will make very little difference, I think I may give it a try , as I don't like the taste of natural yogurt and always add a sugar free flavour to disguise the taste.
    Let you know what happens

    @indi51
Did you make it with pro biotic, as others are suggesting using a existing culture (yogurt based).
Also did you use coconut milk or cream /
Sorry for all the questions but im going to try when my existing tub runs out, and interested on how it turns out Very Happy

I'm not an expert on this and it will be interesting to see how things turn out ... but if you are starting from scratch I think it may be best to use pro biotic ... once you have made your first batch then use some of the existing culture (I think the lady on the video did this?)

It will be interesting to hear how Indy did hers Smile

I tin Coconut milk (Choice grade)
1 16 strain pro biotic capsule (Only the best)
1 Tablespoon Full fat natural yogurt (Hedging my bets)
    Getting gentle warmth !
All mixed in a bottle and placed next to my Anthracite stove that is heating the house at the moment.
its winter now and temp gets to zero or below as we have a cold front passing .

I used a 400ml can of coconut cream and the contents of a probiotic capsule. Will let you know how it turns out. I've never been able to see/taste any discernible difference between coconut milk and coconut cream.

    Update,
My batch has thickened slightly, but is still watery.
We have been quite cold here and I think this may be the cause.
I've moved it into my Greenhouse, were I grow Orchids and its nice and warm Heater controlled so ill see if it gets any thicker, otherwise ill use it in a Thai Recipe calling for Coconut milk of turf it out.
    How's yours doing @indy51.

Mine is much the same as yours - too thin. It's winter here, so maybe that has something to do with it. Tastes nice but much more like a kefir drink than yogurt. I'm trying to thicken with chia seeds. Have also tried a cacao powder version with added shredded coconut and chia to thicken. All in all, not what I'd call an outstanding success.

I'm going to persist with variations on the cacao powder version as it really tastes yummy. Have made another batch with twice the amount of chia and dessicated coconut added right at the start rather than a later addition. Hopefully this will give the bugs something more to work with. If it still doesn't thicken, maybe I'll add a small amount of gelatin to see if that helps the setting progress. I need to buy some of the Great Lakes brand - all the paleo peeps rave about how good gelatin and collagen are for the bones, skin and joints.

Already have the powdered collagen and occasionally mix it with vanilla Rooibos tea - quite palatable.

Oh dear, how long did you leave it out of the refrigerator? The longest I've left mine out (and it's winter here) was 3 days.

I'm reasonably happy with mine now - I add a couple of tablespoons of chia seeds and coconut to the mix at the beginning and it's usually thick enough to put in the fridge by day 3. Tastes good (especially the cacao, cinnamon, vanilla flavoured one) even if the texture is not usual yogurt texture.
