    Suz at The Paleo Network has recently made some good tasting 'Coconut Icy Poles'. If you have any leftover coconut milk or yoghurt ... don't waste it, why not throw it in a popsicle mould instead - now what a good idea !

    Here's how they are made ... just great for summer or any time of year!

    Coconut Icy Poles - so quick and easy,

    INGREDIENTS:
    coconut milk
    handful of berries
    handful of coconut flakes

    INSTRUCTIONS:
    Put some berries at the bottom of each mould
    Next add a pinch of coconut flakes to each section
    Finally top with the coconut milk (or yoghurt)
    Put in the sticks and freeze until solid

    different idea . perhaps i will try them . blueberries and coconut milk combination .

    Hey perhaps have a Salad - Greek Style first and then these?
